Serves 2
2 baking apples (5 ounces each)
½ teaspoon lemon juice
½ cup cranberries, coarsely chopped
2 tablespoons ricotta cheese
1/8 teaspoon cinnamon
1/8 teaspoon grated nutmeg
4 tablespoons water
Low-calorie sweetener as desired
Core apples and peel on top to a 2-inch diameter. Rub inside
and top of apples with lemon juice. Combine remaining ingredients
and stuff into apples. Put apples into crimped foil cups and
place in water in a baking dish. Bake at 375 for 35 minutes.
Sprinkle with low-calorie sweetener and more nutmeg if you wish.
