Italian Shrimp

The Snowbird Diet,
Donald S. Robertson and Carol P. Robertson

Two servings
Preparation time: 30 minutes

12 ounces peeled, deveined shrimp (fresh or frozen)
5 1/2 ounces zucchini, sliced (1 medium)
1 8-ounce tomato, coarsely chopped (3/4 cup)
2 scallions, chopped (4 tablespoon)
3/4 teaspoon salt
1 teaspoon sweet basil
1 teaspoon minced garlic
1/4 teaspoon pepper
2 tablespoons no-oil dressing
1 cup hot, cooked rice

Divide first 8 ingredients in half and arrange on individual pieces of heavy-duty aluminum foil. Drizzle each with 1 tablespoon of the dressing. Seal tightly and steam for 10 minutes. Open packets and pour juices over 1/2 cup rice. Arrange shrimp on the side.
